Tomato, Couscous and Preserved Lemon Salad |

Ingredients
Makes 4 to 6 servings

Preparation |
- 100gr/3 ½ oz couscous (preferably medium)
- 250gr/7oz ripe tomatoes, diced
- 3 tablespoons chopped fresh cilantro / coriander leaves
- 2 tablespoons chopped fresh flat leaf parsley
- 2 tablespoons olive oil
- 1 tablespoon minced preserved lemons (peel only), rinsed and dried
- 1 teaspoon ground cumin
- Salt
- Pepper

Place couscous in a deep bowl. Pour 1 glass cold water over the couscous and leave to stand until all the water has been absorbed into the couscous. Add more water if necessary.
Add tomatoes, cilantro / coriander, parsley, preserved lemons, cumin and olive oil. Toss and season with salt and pepper to taste. Ideally make in the morning, bring to room temperature before serving and season again to taste. |
