Preparation

- 500gr / 1 lb 2 oz pumpkin, peeled and chopped
- 500gr / 1 lb 2 oz sugar
- Zest of 3 oranges, chopped finely
- 1 glass water
- 1 vanilla bean

In a saucepan, combine pumpkin, sugar, orange zests and water. Cut vanilla bean in half lenghtwise. Scrape the seeds from the vanilla bean and add the seeds and bean to pumpkin. Bring to a boil over medium high heat, stirring frequently. Reduce heat, simmer 20 minutes or until thickened, stirring occasionally. Blend until pureed.
Pour hot mixture into sterilized canning jars; seal immediately. Store in refrigerator.
