- 100gr/3½oz Parmesan cheese, freshly grated
- 1/2 teaspoon ground cumin, fresh thyme or rosemary (optional)
- Pepper

Preheat the oven to 180°C / Gas 5 / 356°F. In a bowl, combine all the ingredients. Drop rounded teaspoons of mixture on a baking-paper-lined oven tray. Bake at 180°C / Gas 6 / 356°F for about 6 minutes until just starting to brown. With a plastic spatula, gently lift the crisp up by one edge and slide it onto a wire rack to cool until hardened, about 3 minutes. Repeat with the remaining cheese mixture. When the crisps are completely cool, they can be carefully stacked and stored in a tin or box. |
