Preserved lemons are an important condiment in Morocco, Algeria, and Tunisia. In Morocco they are known as hamad muraqqad and, in Tunisia, qaris baldi immallah. They are also becoming an essential ingredient to the contemporary Western cooking.
Tips for using preserved lemons
Preserved lemons will give a zesty taste to your dishes. To use, remove the pulp from the preserved lemon and discard. Rinse the peel under cold water to remove excess saltiness. The peel can also be blanched to remove even more of the saltiness. Cut into julienne strips or chop. The preserved lemons will keep for up to a year in the refrigerator after opening. |
