Fava Bean Salad with Mint, Baby Spinach and Goat Cheese |

Ingredients
Makes 4 servings
| Preparation |
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- 1 tablespoon fresh mint, minced
- 200gr / 7 oz baby spinach
- 600gr / 1 ¼ lb fresh or frozen fava bean
- 100gr / 3 ½ oz soft fresh goat cheese
- Salt
- Freshly ground black pepper

In a small bowl, whisk together the lemon juice, salt, and pepper. Add olive oil, whisking until thick. Add mint. Set aside.
Wash and drain the spinach. Set aside.
Bring a pot of water to a boil, add the fava beans, and boil 3 minutes. Drain and shell the beans. Season with salt and pepper. Combine with baby spinach. Add dressing and toss salad. Arrange the salad on individual plates. Sprinkle fresh goat cheese on top. |
