Almond Stuffed Peaches Print E-mail
 
Ingredients
Makes 4 servings

Preparation
  • 50gr/2oz almond or butter cookies, crushed
  • 50gr/2oz brown sugar
  • 1 egg yolk
  • 3 tablespoon cream, milk
  • A few drops Amaretto
  • 100gr/3 ½oz ground almonds
  • 50gr/2oz butter + butter for greasing
  • 4 peaches
Preheat the oven to 180°C.

Mix together the almond cookies with sugar, egg yolk, cream and ground almonds.

Cut the peaches in half and remove the stones. Stuff each peach with the almond mixture. Place a knob of butter onto each peach. Place the peaches in a greased baking dish and cook in the oven for 15 minutes, or until golden brown.

Serve lukewarm or cold.
