Roast Pork with Sage Print E-mail
 
Ingredients
Makes 4 servings

Preparation
  • 1kg /2lbs2oz pork loin
  • 2 cloves of garlic, cut in 4
  • 1 sprig fresh sage
  • 150gr/5 ½oz bacon slices
  • 4 tablespoons olive oil
  • 1 glass dry white wine
  • Salt
  • Black pepper

Preheat the oven to 200°C/400°F/Gas6.

Wrap the bacon slices around the pork loin. Tie at 2cm / 1" spaces with kitchen string. Use a knife to push pieces of garlic and sage leaves into holes in the meat.

Brown the meat in a pan with the olive oil. Season with salt and pepper. Transfer the roast in a baking dish. Add 1 glass dry white wine. Cook in the oven for about 1 1/2 hours.
