- 1kg /2lbs2oz pork loin
- 2 cloves of garlic, cut in 4
- 1 sprig fresh sage
- 150gr/5 ½oz bacon slices
- 4 tablespoons olive oil
- 1 glass dry white wine
- Salt
- Black pepper

Preheat the oven to 200°C/400°F/Gas6.
Wrap the bacon slices around the pork loin. Tie at 2cm / 1" spaces with kitchen string. Use a knife to push pieces of garlic and sage leaves into holes in the meat.
Brown the meat in a pan with the olive oil. Season with salt and pepper. Transfer the roast in a baking dish. Add 1 glass dry white wine. Cook in the oven for about 1 1/2 hours. |
